Leaves of the peach leaf bellflower can be eaten both raw and cooked. They are a good source of vitamin C and have a mild flavor, which makes them perfect for salads. During the winter, the plant produces fresh leaves, but the downside is that they are very narrow. This means that a lot of leaves need to be picked to obtain a reasonable amount. The root of the plant can be eaten raw, while the flowers have a sweet flavor and are a nice decorative addition to salads.
