Description

Leaves and young shoots of the field bellflower can be eaten both raw and cooked. They are a good source of vitamin C and have a mild flavor. The root of the field bellflower can also be eaten both raw and cooked and has a nutty and sweet taste. The young roots are the most flavorful and can be a tasty addition to salads.
