Description

Cooked seeds are used as a protein-rich plant dish. They can be prepared in various ways, such as boiled beans, or roasted and ground into powder. Bitterness in the seeds is caused by toxic alkaloids, so it is important to thoroughly rinse them before cooking. Seeds from low-alkaloid varieties are used in making 'tempeh'. Although these seeds are rich in protein, they lack the amino acid methionine. The protein in the seeds has a high digestibility of 90% and a biological value of 53%.
