Description
Young shoots can be cooked and are usually not sour. Despite their small size, they are of good quality after cooking. In April 1995, a plant in the Trebah Gardens in Cornwall produced a significant number of new shoots with a diameter of about 35 mm. It is best to harvest them when they emerge from the ground in spring. Be sure not to harvest too many shoots from the same plant, as this weakens the plant.
