Description
Young shoots can be eaten raw or cooked and are surprisingly not very bitter. The stems of plants in Great Britain typically have a diameter of about 25 mm but can grow up to 4 cm wide. The shoots are harvested in the spring when they are about 8 cm long and are cut about 5 cm below the ground. The young stems are green in color with yellow grooves.
