Description
The sap of this tree contains a certain amount of sugar and is often used as a drink or concentrated into syrup by allowing the water to evaporate. However, the sugar concentration is lower than that of sugar maples (A. saccharum). The syrup is often used as a sweetener in foods. To obtain the sap, the tree is tapped in early spring, with the sap flowing better on warm sunny days following a frost at night. The highest sap production is often achieved in cold winter regions with a continental climate.
